How to win.

You don’t need to be a foodie a food blogger or a vegetarian you simply have to come up with a vegetarian recipe and blog about it….easy peasy.

Here, more formally is what to do…

To enter the competition, bloggers must write a blog post about their favourite vegetarian recipe, mentioning the competition in their blog post to inform readers of the details of the competition. They must notify Betta Living of their entry via email at the address and use #BettaRecipe in your post / tweets.

The last date for receipt of entries is Midday on Wednesday 14th May 2014.

I so wish I could enter this but obviously I can’t ! But just to get things rolling  here is my favourite veggie recipe. Good luck to all who enter!

Super Speedy Pot Luck Quiche

I am a time short and thrifty mum who hates waste.

I am also a vegetarian. Have been for 31 years now..blimey

Super speedy pot luck quiche is my go to recipe when I want the kids to have something very nutritious. When I have lots of bit and bobs of veg left that need using up and when I need a quick to prepare home cooked meal.

This recipe was born out of trial and error during my experiments with a low fat diet. It has remained a firm favorite is a scrummy recipe love that whatever you have left in your fridge  can be used up rather than thrown away.  I adore that is different every single time, depending on what veg you have…keeps it interesting!



I used  a red papper

I large red onion

3 stems of asparagus

I courgette (small)

7 cherry tomatoes

10 mushrooms

300g cottage cheese

4 eggs

Salt and black pepper to taste


Chop all your veggies and chuck them in the frying pan. I use fry light but a little vegetable oil will be just fine. Cook until soft (or a little crunchy depending what taste your prefer.

Mix together the cottage cheese and eggs in a separate bowl

Pile the veggies into the bottom of an oven proof dish and simply pour on the eggy mix.

I pop it in a warmed oven on 160 for about 45 mins or until it is golden brown.



Served with a big green sald or lots of lovely chunky chips this is absolutely delicious!

    What a great competition, and also what a yummy recipe – I am going to try Slimming World again soon and this look perfect for a quick midweek dinner, I tend to like recipes where you can stick in whatever you have!

    What a great idea for using up fridge veggies. I could happily tuck into that just now for breakfast.
