Here’s taking that regular cheese toast up a notch. Spread some homemade tomato sauce on a slice of toasted bread (or finely chop some roasted baby tomatoes and place them on the slice), layer it with some cottage cheese, freshly cut dill and avocado slices if like ‘em. Sprinkle some oregano seasoning over the top and of course, some salt and chilli flakes. Pop it in the oven or toast it on an open pan until the bread is crisp.

- 2 tbsp ketchup
- 8 plum tomatoes (roasted
- cottage cheese ( you choose how much!)
- pinch of dill
- 1-2 avocado - sliced

- pinch of chilli flakes
