Leftover Love – This weeks food challenge….
Cool Cookery challenged me to cook using ingredients from my freezer and that for me is very easy. I often favour frozen food simply because it is so easy, and great value as it does not spoil (well no where near as quickly!) I instantly jumped at the chance – I’m trying to become a domestic goddess, you know!? Their challenge was to create a recipe that consisted of at least two frozen ingredients. Well how simple is that.
Recipe & Method
I had 2/3rds of a loaf of french bread left over so after Googling for advice I wrapped it in zip lock bags and popped it in the freezer. This was going to be the base for my pizzas. When I was ready to use it I just let if defrost thoroughly then popped in the oven for a few minutes to crisp up.
In the fridge from the night before I had 1/2 jar of pasta sauce and a handful of cherry tomatoes. These would be perfect for my little french bread pizzas and far better than them going to waste.
Back into my freezer for some ever useful frozen sweetcorn and my pizzas were prepared! I now had to choose whether to cook them for lunch or pop them back in the freezer as a standby lunch for another day. Great to have a few of these on standby.
