The lovely Nikki from the Stressy Mummy blog has popped over to share her winter warmer recipe with us today suitable for all the family. Homemade, hearty hot soup is a great way to get warm on a budget.

Butternut Squash and Sweet Potato Soup

I love soups.  I know that they are generally associated with cold, winter’s days, but I make and eat soup all year round and soup is so easy to make, generally healthy and a great place to disguise some hidden vegetables for the fussier eaters in the house.
This soup is quite a good one for the autumn, it is so easy to make and you can add or change ingredients to suit your tastes.

Ingredients for Butternut Squash and Sweet Potato Soup

1 medium sized butternut squash 3 sweet potatoes 1 onion 2 or 3 cloves of garlic 600ml vegetable stock

Method

Peel and chop all of the ingredients.  Place into an oven proof dish or tin, drizzle with a little oil and roast in a hot oven (200c) for about 20 – 25 minutes or until the vegetables have softened.  Be careful to not let the vegetables cook too much, especially the onion.

Put all of the ingredients for butternut squash and sweet potato soup  into a bowl or jug with the vegetable stock and season with a little pepper.  Blend all of the ingredients together with a hand blender until you have a smooth soup.
If the mixture is a little thick, add a little more stock or boiling water until you are happy with the consistency.
 You should end up with a simple and satisfying soup

    have never thought to make soup this way, I just throw it all in a pan and leave it to get on with it.
