As I have nentioned before I am a mumbassador for The New Ice Age the web site of the British Frozen food federation whose mission it is is to tell you how healthy, handy and cost effective frozen food is. Temperature monitoring of vans ensure that nutirents and goodness are retined in forzen food and it really can be as good as frehly picked foods. I was sent a some Iceland vouchers and challenged to make a frittata feast from frozen food – they sent me the recipe too. I lost the beans and the pecorino form the mnu as my kids were not keen.
VEGETABLE FRITTATA
Preparation Time: 10 minutes
Cooking Time: 22 minutes
- 2 tablespoons extra virgin olive oil
- 175g frozen chopped onion
- 200g frozen vegetables of your choice,
- 175g frozen broad beans
- 6 eggs
- 2 tablespoons frozen chopped parsley
- 45g pecorino, grated
- Salt and freshly ground black pepper.
Begin by boiling the vegetables and beans in a saucepan for 8 minutes.
Meanwhile, heat the oil in a large frying pan and cook the onion for 5 minutes over a medium heat, drain the vegetables & beans and add them to the pan with the onion. Cook this for a further two minutes.
Beat together the eggs, parsley and pecorino and season, pour into the frying pan and cook over a low heat for 10 minutes, shake the pan often to make sure the frittata doesn’t stick. Place under a hot grill for 2 minutes to finish the cooking. Cool slightly before serving.
