Super Speedy Tofu Tacos Recipe (makes 6)
Ingredients
- Fry light
- 1 tin ratatouille
- 1 pack of marinated tofu
- Fajita seasoning
- half a small bag of Spinach leaves
- Six hard tacos
- Dairy free yogurt
- Grated vegan cheese.
Method:
Simply spray your frying pan with fry light and cook the tofu over a medium heat for about 3 minutes. Add ratatouille and mix. Continue to heat for another 3-5 mins.
Meanwhile heat tacos for 60 seconds in the microwave.
Line the hot tacos with spinach leaves then pile your tofu mix on in.
Serve with a dollop of dairy free natural yogurt on the side for dipping.
These are an absolute taste sensation and full of protein and packed with veg. And a very easy way to provide a vegan tea if you are time short!
