Blueberry and Kiwi Pancakes
Many moons ago I lived for a short while in Texas. One of my absolutely favourite things about living there (apart from the sunshine) had to be breakfast. Blueberry pancakes were my favourite and oh they used to make me leap out of bed in the morning. To this day they make me happy.
I have vowed to eat better as the summer draws to a close and make sure I am getting all the nutrients I need. A lovely and healthy breakfast is just what I need.
Blueberry and kiwi are just the kind of power packed fruits I need to be eating, filling me up with a good dose of vitamins and tickling my taste buds,

So blueberry pancakes and kiwi anyone?
1 medium free range egg
1 cup of self raising flour
1 cup of semi skimmed milk
pinch of salt
100g of blueberries
1 Zespri SunGold Kiwi
2 tablespoons of natural yogurt
1 drizzle of golden syrup
2 tablespoons of olive oil
Put the egg, flour, milk and salt into the mixing bowl and whisk till smooth.
Gently fold in the blueberries
Heat a tablespoon of oil in frying pan over a medium heat and be sure to coat all the bottom of the pan.
Add a serving spoonful of batter to the pan aiming for a round shape (you can probably cook 3 at once make sure they don’t overlap and leave space for them to spread a little)
Serve with slices of juicy kiwi and dollops of natural yogurt with golden syrup drizzled on top.
