Blueberry and Kiwi Pancakes

Blueberry and Kiwi Pancakes

Many moons ago I lived for a short while in Texas. One of my absolutely favourite things about living there (apart from the sunshine) had to be breakfast. Blueberry pancakes were my favourite and oh they used to make me leap out of bed in the morning. To this day they make me happy.

I have vowed to eat better as the summer draws to a close and make sure I am getting all the nutrients I need. A lovely and healthy breakfast is just what I need.

Blueberry and kiwi are just the kind of power packed fruits I need to be eating, filling me up with a good dose of vitamins and tickling my taste buds,

Kiwi is really good for you and this Zespri® SunGold kiwifruit is really delicious too. Do you know they smooth enough to eat without peeling and are ripe from the moment of purchase? It’s fabulous!
The striking golden variety of kiwifruit has a nutrient adequacy score* six times that of blueberries, twice as high as strawberries and 10 times that of apples, giving it the highest score of any commonly available fruit. What’s more it is one of the most nutrient-dense fruits, a powerful combination of minerals, fibre, antioxidants and folates.
