If you want to give your sweetie something sweet, you can go the store-bought route, like cookies or a nice gift basket, but there is something really special about homemade gifts.
If the thought of cooking something has you running for the door, relax. You don’t have to be Anthony Bourdain or Mario Battali to make something awesome in the kitchen. Bread pudding is essentially a baked French toast in that it has four basic ingredients: eggs, milk, bread and sugar. If you have bread pudding in a restaurant, it is most likely to be on the dessert menu. But it is also excellent for breakfast in bed . If you have kids, they can even help you make it.
What You’ll Need:
1 ½ qt (or 1.5 liter) casserole dish
2 Tbsp. (30 grams) softened butter
Wire whisk, or some other mixing utensil
2 whole eggs
2 cups (1/2 liter) whole milk
½ cup (118 grams) white sugar
½ tsp. (2.5 grams) vanilla extract
4 cups (950 grams) stale white bread, ripped into chunks or cut into
½ tsp. (2.5 grams) nutmeg
Fresh fruit (optional)
Powdered sugar (optional)
Whipped Cream (optional)
The Night Before:
Coat the inside of the casserole dish with the softened butter.
Mix the eggs, milk, sugar, and vanilla together in a large bowl with a wire whisk or any other utensil that’s handy.
Add the bread to the milk mixture and stir it around until it’s completely coated.
Transfer the soaked bread to the buttered casserole dish and sprinkle the nutmeg on top.
Cover the dish with the lid. If the dish does not have a lid, cover it with plastic wrap.
Let the dish sit in the refrigerator overnight.
Clean up the kitchen then enjoy the rest of the evening.
The Next Morning:
Take the casserole out of the refrigerator and sit it on the counter for 30 minutes to one hour (to remove some of the chill from the refrigerator).
Preheat the oven to 350 degrees Fahrenheit (180 Celsius).
While the oven and bread pudding are warming, you can cut up some fresh fruit for toppings, make some coffee… or catch up on Sports Center. Once the oven has preheated (the oven indicator light should turn off).put the bread pudding in the oven and bake for 40-45 minutes.
Remove the bread pudding from the oven and let it cool in the casserole dish.
Use a knife or spatula to cut the bread pudding into squares.
Serve warm with a dusting of powdered sugar, fresh fruit and whipped cream.
Instead of stale white bread, try whole wheat bread, stale croissants, or even day-old doughnuts and muffins. If you use doughnuts or other sweet things, only use 1/2 to 1/4 the amount of sugar in the batter.
For less fat, use one whole egg and two egg whites, substitute 2% milk for whole, and line the pan with non-stick cooking spray, or wax paper, instead of butter
You can make different flavors by adding fruit, nuts, and other add-ins. For example, add one ripe small ripe banana, walnuts, and chocolate chips for a banana, chocolate chip bread pudding. Or, try pumpkin puree for a pumpkin bread pudding; crushed pineapple and coconut for a tropical bread pudding.
