Al Fresco holidays are perfect for families.

Parks can be found in France, Italy Croatia, Austria etc. Huge choice too.
In order to win one of the amazing holidays you simply need to enter (and win!) the Al Fresco Holidays Chef of the Year competition They are looking for people who are passionate about all al fresco style food, so if you think your recipe is amazing do pop over and show them! The competition began on 1 May and will run for one month.
The top ten best dishes will then be judged by the Al Fresco team with an overall winner being announced June 14th.
Frittata feast is one of my favourite alfresco recipes
and the one I have entered in to the comp
EASY VEGETABLE FRITTATA
- 2 big tablespoons olive oil
- I very large red chopped onion
- 200g frozen vegetables of your choice,
- 6 eggs
- Salt and freshly ground black pepper.
Boiling the vegetables for 10mins. Heat the oil in a large frying pan and cook the onion for 5 minutes , drain the vegetables & and add them to the pan with the onion. Cook for 3 more mins. Beat together egs, season, pour into the frying pan and cook over a low heat for 10 minutes. Place under a hot grill for 1 minutes to finish the cooking. Dish up.
